Tomato Olive Caper Salsa
3 large tomatoes, chopped
1 cup chopped mixed olives
½ cup red onion chopped
4 green onions sliced
1/3 cup capers
1/3 cup olive oil
zest of 1 lemon
juice of 1 lemon
pinch or two of crushed red pepper flakes
3 tablespoons chopped fresh parsley
1 teaspoon salt
freshly ground black pepper
In a large bowl combine all ingredients. Serve at room temperature.
