Fresh Strawberry Gelato

makes about 1 quart

 

3/4 cup sugar

1 tablespoon cornstarch

1 cup milk

3/4 cup cream

2 1/4 cups sliced and stemmed strawberries

2 tablespoons pomegranate juice

 

Stir sugar and cornstarch together in a medium sized saucepan. Add milk and cream and whisk to blend. Heat over medium heat until milk and sugar mixture just begin to thicken, about 5 minutes. Pour into a shallow baking dish.

 

Place the strawberries and pomegranate juice in a food processor and puree. Strain strawberries into the milk and sugar mixture in the shallow dish and then chill until cold. About 2 hours in the refrigerator or 1 hour in the freezer.

 

Process in gelato in ice cream maker about 20 minutes or until smooth, thickened and creamy. Scrape into a shallow freezer safe container and allow gelato to set up about 2 hours.
