This is a pretty fancy outcome for a pretty simple process. It can be done ahead of time, wrapped and frozen. Just sheet pan reheat just before serving, but allso good at room temperature. I usually serve this with a little caramel drizzle or a dollop of whipped cream and dusting of cinnamon. I included an easy Apple Cider Caramel at the end.

  • 12 apples red skin is pretty
  • 3 sheets puff pastry thawed but cold
  • pureed jam for brushing apricot or apple work well


  • Preheat oven to 375º. Lightly spray regular sized muffin/cupcake tins with cooking spray and set aside.
     Cut apples in half down the center and core.  Turn apple to flat side and cut into thin half moon slices.  Place slices in a bowl with 2 tablespoons lemon juice and cover with water. Cook in the microwave for 5 minutes or until soft and pliable but not mushy. They need to be able to bend without breaking.
    Lay out one sheet of pastry on a lightly floured board.  Roll out fairly thin.  Cut into 8 strips.  For each rose, use one strip of pastry and one apple half or about 8 apple slices.  
     Lightly brush pastry strips with apricot jam.  Lay apple slices, in a overlapping line, along top edge of pastry.  The red line of the skin will be pointed up. Fold bottom part of pastry up and over apples, almost meeting the top edge of the other side of the pastry.  Roll this strip, snail like into a rose. Place in prepared pan and bake until lightly browned, about 35-45 minutes.  Remove from pan and dust with powdered sugar if desired.  You can also serve with Apple Cider Caramel Sauce or just a dusting of cinnamon.

Apple Cider Caramel Sauce

  • makes 1 1/4 cups
    1 cup apple cider
    1 cup brown sugar
    1/2 cup butter
    1/4 whipping cream
      Cook cider in medium sized saucepan over medium heat, stirring often, 10-15 minutes or until reduced to 1/4 cup.  Stir in remaining ingredients.  Bring to a boil over medium high heat, stirring constantly; boil, stirring constantly 2 minutes.  Remove from heat and cool completely.  Chill up to 1 week in advance.   To reheat, microwave at high 10-15 seconds or just till warm.
