Maple Glazed Pumpkin Muffins

Ingredients
  

  • 3 1/2 cups flour all purpose
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3 teaspoons Baker's Sprinkles or your favorite baking spices such as cloves, cinnamon, nutmeg, ginger etc
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree solid pack canned or fresh, not pie filling
  • 1 cup vegetable oil or a good quality fruity olive oil
  • 2 cups sugar
  • 3 large eggs

maple glaze

  • 3 tablespoons butter unsalted
  • 2 cups powdered sugar sifted
  • 2 teaspoons vanilla extract
  • 1-3 tablespoons water
  • 1 tablespoon pure maple syrup good quality

Instructions
 

  • Preheat oven to 350º. Line muffin tins with paper liners. (Use whatever size you like) Mix the dry ingredients and wet ingredients in separate bowls. Add dry to wet and mix just to blend.
  • Bake for 15-30 minutes, depending on the size of muffin tins selected. While muffins cool slightly, melt butter for glaze in a small saucepan. Add sugar and vanilla and stir to blend well. Add water until desired drizzling consistency is reached. Stir in maple syrup and glaze muffins.
