I have a class coming up in early October that I’m excited about.  “The Secret Live of Bees and Cooking with Honey”.  If you are interested in learning more about  bees or starting your own hive, this is a great introductory level event.  We will also be cooking a lovely honey filled lunch to enjoy.  Read more about the class and sign up here.  I find myself cooking with honey all the time and I’ve had people ask, ‘besides in my tea, where would I use honey?’  I say, where would you not!  Just for starters it makes a great base for a glaze or a sauce, so I’ll start there.  Here are 10 (TEN!) bonus recipes that are easy squeezy to incorporate into your kitchen arsenal. Dress up that grilled fish, glaze those ribs, drizzle that cake, sweeten that cocktail and gild those roasted vegetables!  Honey to the rescue!  Enjoy these recipes and support your local bee keepers!

Honey Glaze

¼ cup honey

1 tablespoon brown sugar

1 tablespoon butter

Place all ingredients in a small saucepan and bring to a simmer, whisking to blend and melt butter.  Cook for about a minute and use to glaze.  Can be gently rewarmed on stove top or microwave.  Perfect for pork, fish or chicken

 

Chili Lemon Honey Glaze

½ cup honey

¼ cup chili sauce

2 tablespoons lemon juice (fresh)

Combine all ingredients in a small saucepan and bring to  a simmer, stirring often.  Cook for about 2 minutes or until warm. Pairs well with pork ribs, salmon stir fried greens such as bok choy or broccolini

 

Black Pepper Thyme Honey Glaze

½ cup honey

2 tablespoons water

1 teaspoon freshly cracked black pepper

4-5 sprigs fresh thyme, tied together with cotton string

Combine all ingredients in a small saucepan and bring to  a simmer, stirring often.  Cook for about 2 minutes or until warm.  Discard thyme.  Strain if needed to remove any small thyme leaves. 

Tasty on roasted chicken, wings or fish

 

Horseradish Honey Mustard Glaze

 

½ cup honey

3 tablespoons prepared horseradish

2 tablespoons coarse grained mustard

Combine all ingredients in a small saucepan and bring to  a simmer, stirring often.  Cook for about 2 minutes or until warm.Drizzle on grilled fish or roasted vegetables

 

 

Apple Cider Brown Butter Honey Glaze

¼ cup butter

½ cup honey

1 tablespoon apple cider vinegar (or apple cider)

Cook butter in a small saucepan over medium high heat, watching carefully, for about 5 minutes until brown and fragrant.  It will change colors rather quickly at the end.  Pour into a small bowl to cool; meanwhile, cook honey and vinegar in saucepan over medium, stirring often for about 2 minutes or until heated through.  Whisk in brown butter.Perfect for pork loin or grilled fish

 

Spicy Honey Soy Glaze

¼ cup honey

1 tablespoon soy sauce

1 tablespoon Dijon

1 teaspoon rice wine vinegar

¼ teaspoon crush red pepper

Whisk together in a small bowl.

Delicious as a baste on ribs or pork roast. Use as a salad dressing, just whisk in a bit of olive oil. Also for Asian noodle dishes

 

Honey Lavender Butter Sauce

1 medium shallot, minced

1 cup white wine

2 tablespoons white wine vinegar

Pinch of fresh or dried thyme

1/ 2 cup cream

1 sprig fresh lavender or a small pinch of dried culinary lavender buds

8 tablespoons unsalted butter, cubed

salt

Combine shallots, white wine, vinegar, and thyme in a small saucepan.  Bring to a boil then lower heat to a simmer, reducing by half. Add cream and lavender; reduce by half. Remove from heat and add butter one cube at a time, whisking as you add each piece. When you finish with all the butter pour the sauce through a strainer and season with salt. Reserve at room temperature or in a warm water bath. 

Delicious on salmon, pork or chicken.

Honey Lemon Mint Sauce

½ cup honey

¼ cup lemon juice

Zest of one lemon

Handful of fresh mint leaves, crushed or bruised with your handsCombine honey, lemon, zest and mint in a small saucepan.  Heat mixture to a simmer and cook for 2-3 minutes, but don’t let it boil.  Remove from heat and strain out mint leaves. 

Great in cocktails, iced tea or drizzled on baked goods.

 

Honey Lime Yogurt Dressing

6 ounces vanilla or lime yogurt

2 tablespoons fresh lime juice

Zest of one lime

¼ cup honey

Whisk all ingredients together in a small bowl.  Keep chilled until ready to use.

Great as a fruit dip or as a dressing for fruit salad.

Honey Cinnamon Yogurt Dressing

6 ounces vanilla yogurt

¼ cup honey

1 tablespoon cinnamon

Whisk all ingredients together in a small bowl.  Keep chilled until ready to use.

Great as a fruit dip or as a dressing for fruit salad.
