Honey Cumin Roasted Carrots

- 2 pounds baby carrots, assorted colors are nice you many also cut large carrots into 2"diagonal slices
- 3 tablespoons whole grained mustard
- 2 tablespoons olive oil
- 2 tablespoons honey
- salt and pepper
- 1 teaspoon ground cumin
- 2 tablespoons cilantro leaves minced
Preheat oven to 400º. Line a sheet pan with foil. Mix mustard, oil and hone together. Toss carrots in mixture, coating thoroughly. Arrange carrots in a single layer on sheet pan. Season with salt, pepper and cumin. Roast until fork tender, about 25 minutes. Sprinkle with cilantro just before serving.
