Crown Roast of Pork with Garlic Herb Butter

- 3-4 cloves garlic minced
- 3 tablespoons olive oil
- 3 tablespoons butter softened
- 1 tablespoon fresh thyme chopped (if dried, use 2 teaspoons)
- 1 tablespoon rosemary leaves minced (if dried, use 2 teaspoons)
- pork rib roast set at room temp for 1 ½ hours
- salt and pepper
In a small bowl, blend garlic, olive oil, butter and herbs. Dry the roast thoroughly with paper towels and then rub the herb butter all over the roast. Let stand at room temp for about 30 minutes or refrigerate overnight. If refrigerating, let stand at room temp for 2 hours before roasting.Preheat oven to 500º. Set the pork in a roasting pan and season generously with salt and pepper on top of the herb butter. Roast for 15 minutes. Reduce heat to 325º. Continue roasting for about 40 minutes or until internal temperature reaches 140º-145º. Let pork rest for about 10 minutes. Transfer pork to a cutting board and cut between ribs to serve. Drizzle pork slices with juice from roasting pan.
