Candy Bar Bars

Since our big Easter Celebration and Hunt didn’t happen this year, I had lots of leftover Easter Candy.  We also make these at Halloween and Christmas with all of our leftover “house candy” that always seems to be laying about.  These are quick and easy with minimal ingredients and minimal clean up.  I stick them in the freezer and pull ’em out when I “need” one!  Add nuts if you like.  I prefer to stay in one lane with the candy–these were all peanut butter cup..it’s a good way of getting rid of the bars that never get eaten in our house, like Milky Way,  Mars Bars and 3 Musketeers!  #BetterBakedInABar

Candy Bar Bars

makes 12-24 squares or bars

 

4 tablespoons butter, melted and cooled

2 cups brown sugar

4 teaspoons vanilla extract

2 eggs+2 egg yolks, lightly beaten together

2 cups flour

1/4 teaspoon salt

2 cups chopped candy bars

3/4 cup chocolate chips (optional)

 

Preheat oven to 350ยบ.  Lightly spray a 9 x 13 pan with cooking spray.  Line with parchment paper, leaving a 1-2″ border above pan edge. Lightly spray paper.

 

In a medium sized bowl, mix the melted butter, brown sugar and vanilla.   Add beaten eggs and egg yolks, mixing thoroughly to combine.

 

Lightly sprinkle flour and salt over wet ingredients and then fold in using a rubber spatula.  Take care not to over mix.  Fold in candy bars  and chips, if using.

 

Spread evenly in prepared pan and bake for 25-28 minutes or until golden brown and firm to the touch.  The center may still be slightly soft.  Cool pan on wire rack for an hour before cutting as desired.
