Coffee Cake with Streusel

Delicious and easy coffee cake with lots of streusel topping

  • bundt pan, 9 x 13 baking dish or cup cake tins and liners

Ingredients
  

streusel topping

  • 1 1/4 cups brown sugar
  • 1 1/4 cups flour
  • 1 tablespoon baker's sprinkles or favorite baking spices
  • generous pinch salt
  • 10 tablespoon butter softened
  • 1 1/2 cups nuts of choice toasted

cake batter

  • 3 cups flour
  • 2 1/4 cups sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter softened
  • 1 cup sour cream or vanilla yogurt
  • 1/4 cup milk or buttermilk
  • 4 large or extra large eggs
  • 1 genereous tablespoon vanilla

optional glaze

  • 1 cup powdered sugar sifted
  • 1-2 tablespoons brewed coffee

Instructions
 

  • Preheat oven to 350º. Generously spray a bundt pan or 9x13 baking dish with cooking spray. In a small bowl combine the streusle ingredients, working it with your fingers to make a crumbly mixture. Set aside.
  • For the batter, in a mixer bowl, add the flour, sugar, baking powder, baking soda and salt.  Using the paddle attachment, mix on low until just combined.  Add the butter and beat for 2-3 minutes until mixture is moist and sandy looking.   
  • In a medium bowl, whisk together the sour cream, milk, eggs and vanilla until just mixed. Add the wet mixture into the dry mixture until batter is smooth but not overbeaten.  
  • Spread half of the batter into the prepared baking dish.  Sprinkle half of the streusel topping on the batter. Carefully spread remaining batter over streusel and then remaining streusel over batter, ending with the streusel layer. 
  • Bake for 55 minutes to 1 hour or until a toothpick inserted in the center comes out clean.  Cool on a rack until cake is room temperature and just slightly warm if you want to turn the cake onto a platter.  Alternately you can serve from the pan.  
     Drizzle with glaze if desired. 
     

Notes

I sometimes add granola or coconut into my streusel topping just for added crunch. You can make this as a fancy round bundt cake, a sheet or as muffins--small, medium or jumbo.  Just distribute the batter and streusel accordingly.
