Lavender Truffles
Lavender Infused Honey

Lavender Truffles

 1-cup cream
1-2 tablespoons dried lavender
12 ounces chocolate, cut into chunks (you could use bittersweet, semi-sweet, dark, milk or even white chocolate, just make sure to use extra good quality!)

 

Warm cream in a small saucepan till it just barely starts to simmer.   Remove from heat and add dried lavender.  Cover and allow it to steep for 15 minutes.  Strain out lavender, return cream to saucepan and re-warm until just before it begins to simmer. Remove from heat and add chocolate chunks, stirring until melted and smooth.  Set in refrigerator to cool until firm.  Scoop into balls and place on wax or parchment paper.  These can be rolled in cocoa, Fleur du Sel, toasted nuts, coconut or lavender flavored sugar*. 

 

*Lavender Sugar:  In the bowl of a food processor or blender, process 1 cup of sugar to 2 tablespoons of dried lavender.  Blend until flower buds are pulverized into the sugar.

Lavender Infused Honey

 

Heat a mild-flavored honey (such as orange blossom) in a small saucepan. Add crushed dried lavender blossoms, about 1-2 teaspoons dried flowers to 1 cup honey.  Remove from heat and allow lavender to infuse into the honey for half an hour or until the desired intensity of lavender flavor is reached. Strain through a fine mesh sieve.

Lavender Scented Mascarpone Fresh Berry Sundaes

 Cheese:

1 tablespoon lavender honey
1 (16-ounce) tub mascarpone
1 teaspoon dried lavender, crushed

 1 recipe “Crumbles”
1 recipe marinated berries
1cup raspberries
1 cup blueberries
1 cup strawberries

 

Marinated Berries

Zest of one orange
Juice of one orange
1/4 cup lavender honey
2 tablespoons Chambord
2 cups mixed berries (blueberries, blackberries, raspberries)

 

 

In a medium saucepan bring the orange juice, zest, honey and liqueur to a boil.  Add berries and remove from heat.  Cover and allow to steep for about 15 minutes.  Strain fruit, reserving juice.  Set berries aside.  Place saucepan back over medium high heat and allow to simmer until reduced by half.  Set this Berry Syrup aside as well.

 

Crumbles

Crust:
1 cup graham cracker crumbs
1/2 cup finely chopped pecans
1/4 cup packed brown sugar
1/4 cup sugar
1/2 stick melted unsalted butter, cooled

 

 

Preheat oven to 350°

Mix  ingredients and press in an even layer in the bottom of a sheet pan.  Bake until lightly browned, about 15 minutes.  Allow to cool thoroughly, then crumble into medium to large sized pieces.

Mix all cheese ingredients together, cover and chill.

To assemble sundaes, layer Mascarpone Cream, strained  Marinated Berries, fresh berries and crumbles.  Spoon reserved reduced syrup on top to finish
