Peppermint Mojito

Finely crushed peppermints, peppermint cocktail rimmer or a mixture of red and white coarse sugar (baker’s sugar).

  • Juice of 1 lime

  • 4 Sprigs fresh mint

  • 2 TBS sugar

  • 1 TBS grenadine

  • 1 oz white rum

  • 1 ox Peppermint Schnapps - very cold

  • Champagne - very cold

  • 2 peppermints

Moisten the edge of two Champagne flutes with lime juice.   Rim with peppermints or sugar.

Muddle the lime juice, mint leaves, sugar and grenadine in the bottom of a shaker.   Add ice, rum and Schnapps and shake to mix.  Strain mixture into two champagne flutes. Top with Champagne.  Garnish with peppermint.
